Easter Lamb Cakes from Laura’s

We had lamb cakes for Easter when I was a child. I remember them as homemade and funny looking. They sat out and waited for us to dig into them, so they were pretty dry cake. Then, of course, there is the conundrum: How do you eat a lamb cake? Do you start by cutting of its head or at the rear? We always saved the head for last, which worked out well for me. I loved the head because it had more frosting on it than the rest of the cake, and that’s what I was interested in. At some point, probably around the same time we stopped getting Easter baskets and finding eggs, we also stopped having a lamb cake. Two years ago, I felt inspired and got myself a lamb mold and started baking.

These cakes remind me of being a kid. I went through a number of recipes, changed them up, started over again, and rethought. The beneficiary, of course, was my family, who always gets to taste test my creations. They love it when I am trying out new recipes! After much deliberation, my family decided on their favorite one. Surprisingly, it was not the same one that was my favorite, but I was out numbered. My favorite had a sour cream base; theirs was a much more traditional pound cake.

We have now started a new tradition. I make a whole bunch of lamb cakes, have the family over, and everyone gets to decorate one and take it home! It turns out to be a great, fun way to spend time with the family. Everyone’s turns out so completely different. This year, I’ll post the results!
